Beetroot Salad

A traditional Cypriot dish served either as a side dish, or as a meal, simply by adding boiled potato, onion and lots of parsley!

1 kg beetroot
5-6 cloves garlic, finely chopped
olive oil
wine vinegar
parsley (optional)
1 onion
salt

Preparation

Wash the beetroot and boil in plenty of water until cooked.
Peel and cut in slices.
Place in a salad bowl and add garlic, salt, olive oil and vinegar according to taste and mix well.
Garnish with finely chopped parsley and onion rings.
