Lentil Soup

Another delicious meal Cypriots very much enjoy during the winter season. Packed with protein, it keeps the body going and the belly happy and warm.

1 cup lentils
5 cups water
2 carrots finely chopped
1 onion finely chopped
3 lettuce leaves finely shredded
1/2 bunch coriander leaves, finely
chopped
1/4 cup olive oil
1/4 cup wine vinegar
salt, pepper

Preparation

Wash and drain the lentils.
Place in a pan with water and let them cook over a low heat.
When the lentils are nearly cooked add all the vegetables and
simmer until cooked.
Add the olive oil, vinegar, salt and pepper and cook for 5 more
minutes.
