The Big Greek O

1/3 cup (80ml) olive oil
3 leeks (white part only), thinly sliced
3 zucchini, coarsely grated
1 onion, chopped
1/4 cup chopped mint
2 tablespoons chopped dill
8 eggs, beaten
150g marinated feta cheese, drained, crumbled (optional)
Preparation

Add zucchini and onion, cook for 1-2 minutes, then add mint, dill and eggs, then season. Mix the ingredients, then pour mix into pan until golden and set.
