Quinoa Tabbouleh

Tabbouleh is a classic Middle Eastern salad which is very popular all around the world. Probably one of the most versatile salads and very refreshing during the summertime. Tabbouleh consists of Bulgur wheat, diced tomatoes, mint, parsley, onions and lots of chopped parsley. It is often used as a side salad, or as filling in a pitta sandwich.  This Quinoa Tabbouleh recipe substitutes Bulgur wheat with Quinoa.

Ingredients:
1 cup raw quinoa
Juice of 1 lemon
4 tablespoons of extra virgin olive oil
½ cup chopped mint
1 cup chopped parsley
1 medium onion finely chopped
Salt and pepper to taste
2 tomatoes, seeded and cut into small cubes

Instructions:
1. Cook the quinoa in salted water for 10 to 15 minutes, or until it becomes soft.
2. Drain the water and place it in a bowl.
3. Add the rest of the ingredients and season to taste with salt and pepper.
4. Keep cold and serve.

Tip:
You may adjust the acidity by adding more lemon juice if you desire.
