Tahini and Eggplant Dip

Tahini and Eggplant Dip

Ingredients
2 medium eggplants
2 cloves of garlic
2 tablespoons tahini
Juice of 1 lemon
Pinch of cumin
2 tablespoons of coriander, thinly sliced
Salt and pepper

Instructions
1. Preheat the oven to 180o Celsius.
2. Slice up each eggplant and place a garlic clove. Place the eggplant in a pan and bake for 40 minutes or until it is tender.
3. Once the eggplant is out of the oven and comfortable to touch, peel it off and place it in a food processor along with the rest of the ingredients.
4. Correct the mix with salt and pepper.
