Creamy Parsnip Dip

Did you know that parsnips are a root vegetable which belongs to the same plant family as celery, parsley and carrots?  The parsnip’s unique flavour comes when its starches change to sugar. This happens after the first frost, when the vegetable is still in the ground. These versatile vegetables contain high levels of potassium, manganese, magnesium, phosphorous, zinc, and iron, in addition to a remarkable range of vitamins, including vitamin B, C, E, and K, as well as high levels of fibre and some protein.

Lets try out this nutritious and easy to make Creamy Parsnip Dip that our chef Fivos taught us how to make at one of our recent  Clean Cooking Club  sessions.

Ingredients

3 small parsnips
2 tablespoons of extra virgin olive oil
Coconut milk, as needed
Salt and pepper, to taste

Instructions

1. Cook the parsnips in salted water until tender to the fork. Be careful not to overcook.
2. Purée all the ingredients in a food processor or mash them with a fork while gradually adding the coconut milk. Continue until you reach a creamy consistency.
3. Correct the taste with salt and pepper.
4. Serve in a bowl with corn chips or raw vegetables (crudités).
