The Healthy Pancake

The Healthy Pancake does ineed exist! Prepare the kids for a treat and rid yourself of the guilt that comes along with endulging in a pancake breakfast. This recipe is made from spelt flour and without dairy! Who knew you could enjoy a healthier alternative when it comes to pancakes?

Serves 1

Ingredients:
1/2 cup spelt flour
1/2 t cinnamon
Tiny pinch sea salt
1 t baking powder
1/2 c unsweetened almond milk ( coconut will also do)

Directions:
Place all dry ingredients together in container the night before and mix. The next morning, all you need to do is heat a pan (try avoiding Teflon cook wear) on medium heat while mixing the batter. Line the bottom of the pan with very little oil using a paper towel (I use the old fashioned dip and dab technique to cover the bottom of the pan with just enough olive oil to prevent sticking). Add the milk to dry ingredients and stir well. Pour the batter into the pan on med-low temperature using a ladle (soup bowl utensil) for evenly proportioned pancakes. Flip pancakes when bubbles pop and cook other side.

Now add all the goodies on top. Prefer healthier options like organic maple syrup or carob honey and sprinkle over  with nuts and seasonal fruit!
