Vegetable Soup

Hooray! It is soup season again! I love the taste of a hot soup on a cold winter night. The problem with soups is that we have a hard time controlling the quantity we consume. Therefore, we thought of sharing a low fat Vegetable Soup recipe to help you keep your “sin” level to the minimum.

Yield: 1.5 litres

Ingredients
Extra virgin olive, as needed
2 onions cut into small cubes
1 kilo of vegetables cut in cubes (carrots, celery, potatoes, mushrooms, cabbage)
¼ of bunch of cilantro, chopped
1-2 litres of vegetable or chicken broth (see my recipe for vegetable broth)
200 ml of coconut milk (optional)

Instructions
1. In a medium stock pot sauté the onions in the olive oil until translucent.
2. Add the cilantro and the rest of the vegetables and cook for about 5 minutes. Add enough broth to cover the vegetables.
3. Cook for 30-40 minutes or until the vegetables become tender.
4. Add coconut milk, if you wish.
5. Purée the soup in a blender.
6. Adjust the seasoning with salt, pepper and a little bit of lemon juice.
7. Serve.

Note: You may need to add more broth as the vegetables cook. Once you purée the soup check the consistency and adjust by adding a bit more broth at the end.
