Zoodles (Zucchini Noodles)

If you are looking to have a little fun in the kitchen, you have to try making a bowl of Zoodles (Zucchini Noodles). Zoodles are ‘imitation spaghetti’ without the flour and with all the healthy nutrients zucchinis have to offer. Zucchini’s are an excellent source of vitamin A, magnesium, folate, potassium, copper, and phosphorus and contains very few calories.

For those of you who don’t own this wonderful appliance, you can purchase  it at most stores which sell cook wear and kitchen accessories,  or by clicking  Spiralizer Tri-Blade Vegetable Slicer

Now, let’s make some Zoodles!

Ingredients
(serves 2)

For the Zoodles
3 Medium Zucchinis
1 tsp of Coconut Oil (or Olive Oil)

For the Sauce
1 Avocado
1 Clove of Garlic
1 tsp of Lemon Juice
½ Cup of Fresh Basil (plus two extra leaves for garnish)
¼ Cup of Water
Salt/Pepper to Taste
1 spring onion bulb
Topping:
½ Cup of sliced cherry tomatoes
1 chopped spring onion
3 Tbsp of Chopped Walnuts

Instructions

For the Zoodles
*Spiralize 3 medium zucchinis; making sure to pat the zoodles dry once you’re done
*Heat a tsp of coconut (or olive) oil in a medium, eco-friendly, frying pan add zoodles to the pan, with a spatula push the zoodles around the pan so they’re lightly coated with oil, add a pinch of salt
*Cook the zoodles for 10-12 minutes over medium/low heat

For the Sauce:
*Place all sauce ingredients (avocado, garlic, lemon juice, basil, water, and salt/pepper) into a food processor
*Divide zoodles into two bowls and stir avocado sauce into each bowl
*Top each bowl with tomatoes and chopped walnuts
Optional: Garnish spring onions and basil leaves
