All Natural Peanut Butter Banana Date Cookie

It seems that the All Natural Peanut Butter Banana Date Cookie has acquired many fans! Preferably Pure’ s Facebook followers have been asking for the recipe since I posted it last week and I must say I am so excited that you are all interested in this healthy, easy to make snack! I hope it inspires you to make more homemade goodies to keep around the house and gradually avoid the sugary stuff we purchase of the shelf! This recipe is sugar free, gluten free, flour-less and vegan all in one.
So here it goes.

Ingredients
15 dates or dates, pitted
1 ripe banana
3 tablespoons oats
3 tablespoons homemade peanut butter (see recipe)
1 tablespoons water
3 tablespoons desiccated coconut
1 teaspoon vanilla powder
¼ teaspoon cinnamon
1 teaspoon coconut oil

Instructions
1. Preheat oven to 170C
2. Mash the banana in a bowl using a fork to form a paste.
3. Puree all the rest of the ingredients in a food processor until well mixed and then add to the bowl of banana paste and mix well.
4. Scoop the mixture with a table spoon and roll into a ball. At this stage, you can add more oats, or more coconut oil in order to make it firm enough to be able to shape it (flatten to form cookie shape).
5. Once you have formed a cookie shape, place the cookie ‘dough’ on to the baking sheet and place in the oven for about 12-15′, depending on how soft you want the cookie to remain.

Makes 12 cookies
