Quinoa Burgers

As it turns out, Quinoa is not only super nutritious, it is also one of the  most versatile ingredients when it comes to healthy eating and it cooks just like rice!  This means, you can use it to replace rice in many of your favourite recipes.

These Quinoa Burgers were very simple to make and absolutely scrumptious. What is great about these burgers is that you can combine so many different flavours. One of our Clean Cookers suggested chilli flakes or chilli powder, as she tends to like things on the spicy side!  This recipe allows for you to be as creative as you want to be! Have a blast!

Quinoa Burgers

Serves 6 – 8 persons

Ingredients
Olive oil as needed
1 onion, chopped
1 scallion, chopped
1 cup cooked white quinoa
2 cloves of roasted garlic, smashed (see the instructions below)
¼ of a cup minced cilantro
½ a cup of breadcrumbs (fresh from Rye, Spelt or Kamut bread)
1 small carrot, finely grated
1 teaspoon of oregano, preferably fresh
1 teaspoon of mint, preferably fresh
Pinch of cumin (optional)
1 egg (optional)
½ a cup of puréed white beans

Instructions

Cooking Quinoa
1. 1 cup dry quinoa yields about 3 cups cooked quinoa.
2.To cook 1 cup quinoa, you need about 2 cups liquid.
3.Measure quinoa.
4.Vigorously rinse quinoa in a mesh strainer to remove quinoa’s bitterness coming from its outer coating.
5.Measure your liquid, vegetable or chicken broth. Also, add about 1/4 teaspoon salt to each cup dried quinoa when cooking. Try adding other spices and aromatics during cooking as well, like a clove of smashed garlic, a sprig of fresh rosemary, or a dash of black pepper.
6.Bring your liquid or broth to a boil and add quinoa. One cup of quinoa will cook in about 20 minutes.

Instructions

Burger
1.In a sauté pan, add enough olive oil and sauté the onions and the scallions for a few minutes. Transfer to a bowl and let them cool.
2.Place the rest of the ingredients in a bowl along with the onions (except the beans) and mix them well.
3.Add enough of the bean purée so that the mixture holds together. You might need to add a bit more breadcrumbs.
4.Make a small patty and test for seasoning by sautéing it in a pan.
5.Shape the burgers so that each weighs about 80 grams, sear them off and serve them with the salad.

Instructions

Roasted Garlic
1.Heat the oven to 180 degrees Celsius.
2.Peel the garlic and wrap it in aluminium foil.
3.Roast for 30 minutes.
