Home Made Herbed Pappardelle with Organic Flour

When cooking becomes an art form. Making these paper thin sheets of pasta during our Clean Cooking Club session was a thrill! We made Home Made Herbed Pappardelle, with Organic Flour, in which we placed herbs of our choice, and  the effect of the herbs blending in with our organic dough was absolutely beautiful…as was the taste! Herbed Pappardelle

(paper thin sheets of pasta with herbs)

Serves 4 persons

Ingredients
500 grams pappardelle

Sauce:
Olive oil as needed
1 small onion, finely diced
2 tablespoons of chopped spring onion (scallion)
Corn kernels 100 grams
250 grams of cherry tomatoes, cut in half
5 leaves of basil, cut chiffonade (very thinly sliced)
Juice and zest of one lemon
Salt and pepper to taste

Instructions
1.Make the sauce: Heat up the olive oil in a pan and add the onions and the scallions. Cook for a few minutes until the onion becomes translucent.
2.Add the corn and cook for a couple of minutes.
3.Add the cherry tomatoes.
4.Add the juice and the zest and finally add the basil.
5.Add the cooked pasta and toss so that the ingredients coat the pasta.

Serve immediately.
